Ingredients:
- 4 cups water
- 4 tablespoons miso paste (white or red)
- 1 cup tofu, diced into small cubes
- 1 cup sliced mushrooms (shiitake or button)
- 2 green onions, thinly sliced
- 1 sheet nori (seaweed), cut into small pieces
- Optional: 1 tablespoon soy sauce for extra flavour
Instructions:
1. In a pot, bring the water to a gentle boil over medium heat.
2. Add the diced tofu and sliced mushrooms to the pot and let them simmer for about 5 minutes until they are tender.
3. Take a small bowl and dilute the miso paste with a little bit of hot water from the pot to make it easier to dissolve.
4. Once the tofu and mushrooms are cooked, reduce the heat to low and stir in the diluted miso paste until it is completely dissolved into the soup. Be careful not to boil the miso paste, as it can lose its flavor.
5. Add the sliced green onions and pieces of nori to the soup, stirring gently to combine.
6. Taste the soup and adjust the seasoning if needed. If you prefer a saltier flavor, you can add a tablespoon of soy sauce.
7. Let the soup simmer for another minute or two to allow the flavors to meld together.
8. Once the soup is ready, remove it from the heat and ladle it into bowls.
9. Serve the miso soup hot and enjoy its comforting warmth and savory flavor.
