How to make Homemade Ramen

Ingredients:

4 packs of ramen noodles (discard seasoning packets)

8 cups chicken or vegetable broth

2 tablespoons soy sauce

2 tablespoons miso paste

1 tablespoon sesame oil

1 tablespoon grated ginger

4 cloves garlic, minced

1 tablespoon vegetable oil

2 cups sliced mushrooms (shiitake, button, or oyster)

2 cups baby spinach

4 soft-boiled eggs

2 green onions, thinly sliced

1 sheet nori (seaweed), cut into thin strips

Optional toppings: sliced bamboo shoots, corn kernels, sliced cooked chicken or pork, bean sprouts



How to Make It-

In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.


Pour in the chicken or vegetable broth and bring to a simmer. Stir in the soy sauce, miso paste, and sesame oil, and let it simmer for another 5-10 minutes to allow the flavours to meld.


While the broth is simmering, cook the ramen noodles according to the package instructions. Drain and set aside.


In a separate pan, heat a little vegetable oil over medium heat. Add the sliced mushrooms and cook until they are tender and golden brown, about 5-7 minutes.


To assemble the ramen bowls, divide the cooked noodles among serving bowls. Ladle the hot broth over the noodles, making sure to distribute the mushrooms and spinach evenly among the bowls.


Halve the soft-boiled eggs and place one half in each bowl of ramen. Arrange the sliced green onions and nori strips on top of the bowls.


Serve the ramen hot, with additional toppings like sliced bamboo shoots, corn kernels, sliced cooked chicken or pork, and bean sprouts if desired.
