Crispy Homemade Tempura Recipe

Ingredients:

- 1 cup all-purpose flour

- 1/2 cup cornstarch

- 1 teaspoon baking powder

- 1 cup ice-cold water

- Assorted vegetables (such as sweet potatoes, bell peppers, zucchini, broccoli florets)

- Seafood (such as shrimp, squid, fish fillets)

- Vegetable oil, for frying

- Salt, for seasoning

- Tempura dipping sauce (store-bought or homemade)





Instructions:

1. In a large bowl, whisk together the all-purpose flour, cornstarch, and baking powder until well combined.


2. Gradually pour in the ice-cold water while whisking continuously until you have a smooth batter with a slightly thick consistency. Be careful not to overmix; it's okay if there are a few lumps in the batter.


3. Heat vegetable oil in a deep fryer or large pot to 350°F (180°C).


4. While the oil is heating, prepare your vegetables and seafood. Cut vegetables into bite-sized pieces, and if using seafood, ensure it is cleaned and patted dry with paper towels.


5. Dip the vegetables and seafood into the batter, ensuring they are evenly coated. Allow any excess batter to drip off before carefully placing them into the hot oil.


6. Fry the tempura in batches, being careful not to overcrowd the fryer or pot. Fry until the tempura is golden brown and crispy, about 2-3 minutes for vegetables and 3-4 minutes for seafood.


7. Once cooked, use a slotted spoon or wire mesh skimmer to transfer the tempura to a plate lined with paper towels to drain any excess oil. Immediately sprinkle with a pinch of salt while still hot.


8. Serve the tempura hot with tempura dipping sauce on the side for dipping.
